The concept for Night of the Funk is to highlight beers that are spontaneously fermented via the open air, infected during maturation in the barrel, purposely inoculated with wild yeast strains and bacteria, or involve some other funky ingredient or technique. Many are aged in wood vessels for long periods of time, but we’re awakening them for your drinking pleasure on this special night!
